Step by step

INGREDIENTS


  • 1 kg pork pancetta, cut into 3-4 cm portions
  • 600 g sweet potatoes, peeled and cut into cubes
  • 3 tbsp olive oil
  • 1 tsp sweet paprika (or smoked paprika)
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and freshly ground pepper
  • Fresh thyme or parsley for garnish

RECIPE


  • STEP 1
    Preheat oven to 200°C (conventional) or air fryer to 190°C.
  • STEP 2
    In a bowl, mix olive oil, paprika, oregano, garlic powder, salt, and pepper.
  • STEP 3
    Coat the skinless pancetta well with the mixture and let marinate for 15-20 minutes.
  • STEP 4
    Toss the sweet potatoes in the remaining oil and spice mixture.
  • STEP 5
    Arrange the pancetta in a baking dish lined with parchment paper or in the air fryer basket, alternating with the sweet potatoes.
  • STEP 6
    Roast for 30-35 minutes (oven) or 25-30 minutes (air fryer), turning the meat pieces and stirring the potatoes halfway through for even cooking.
  • STEP 7
    Check with a meat thermometer (internal temperature 70-75°C), garnish with thyme, and serve hot.
